Recipe: Baked Barbecue Salmon
Ingredients
1/2 cup pineapple juice
fresh lemon juice from 1 lemon
~1 lb salmon
1 tablespoon brown sugar
4 teaspoons chili powder
grated lemon rind from above lemon
3/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
Preparation
- Combine first 3 ingredients in a zip-top plastic bag and marinate in
refrigerator 1 hour.
- Preheat oven to 400 degees F.
- Remove fish from bag; discard marinade.
- Combine sugar and next 5 ingredients (sugar through cinnamon) in a
bowl and mix well.
- Rub this into the top of the fish (I leave the skin on) and sprinkle
more lemon juice on the top.
- Cook in an 11 x 7-inch oiled baking dish.
- Bake until fish flakes easily when tested with a fork or how ever you
like your salmon, 12 to 20 minutes.
I like to have it with roasted garlic potatoes and grilled asparagus.
