Recipe: Old-Fashioned Beef Stew

Ingredients
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds stewing beef
- 1/4 cup vegetable shortening
- 4 cups boiling water
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 1 large onion, sliced
- 2 bay leaves
- 1/4 teasoon ground allspice
- 12 small carrots, peeled and trimmed
- 12 small white onions
- 8 small new potatoes, peeled
Combine flour, salt, and pepper on waxed paper.
Roll beef in mixture, shake off excess.
Melt shortening in a heavy-bottomed pot. When fat
starts to smoke, carefully add beef, only five or six pieces at a time.
Brown all sides, then remove. After the last batch, return meat to pot;
stand back, and slowly pour in boiling water.
Stir; add lemon juice, Worcestershire sauce,
sugar, sliced onion, bay leaves, and allspice.
Lower heat; cover; simmer for 1-1/2 to 2 hours,
until meat is tender.
Add carrots, white onions, and potatoes, cook for
20 to 25 minutes, until easily pierced with a fork. Ladle stew into
large bowls and serve.
